Sculpture of Edinburgh Castle Made out of Veggies Will Be Presented by PETA in Honour of City's Plant-Based Cuisine

What: Despite, or perhaps because of, its association with high rates of obesity and other diet-related diseases, vegan-friendly eating is on the rise in Scotland. After awarding Glasgow the accolade in 2013, PETA will now pass the title of the UK's Most Vegan-Friendly City to Edinburgh. To celebrate, PETA will present the Lord Provost of Edinburgh, the Rt Hon Donald Wilson, with a replica of Edinburgh Castle made entirely out of vegetables on Monday.

Edinburgh cemented the top spot with more than 20 vegan-friendly restaurants, including popular eateries like The Auld Hoose and Henderson's, which offer everything from soups and salads to burgers and traditional haggis - served with a cruelty-free twist.

"Vegan eating can help reduce the risk of developing lifestyle-related diseases, such as heart disease and diabetes, which affect Scottish citizens at a high rate", says PETA's Yvonne Taylor, an Edinburgh native. "With so many delicious, plant-based options available throughout the city, it's never been easier to cut animal-derived foods out of our diets."placeholder image

Yvonne Taylor, a spokeswoman for Peta who is from Edinburgh, said: “Vegan eating can help reduce the risk of lifestyle-related diseases, such as heart disease and diabetes, which affect Scottish citizens at a high rate.

“With so many delicious, plant-based options available throughout the city, it’s never been easier to cut animal-derived foods out of our diets.”
